<p>Quinces are garden fruits that grow in small shrubs. In May and June they delight us with bright, orange blooms, but in September, when the fruits begin to ripen, the whole garden is surrounded by the aroma of quince. When they turn golden yellow, it&#8217;s time to pick and process them.</p>
<p>Fruits are harvested in organic farm in the <a href="https://en.wikipedia.org/wiki/Gauja_National_Park" target="_blank" rel="noopener">Gauja National Park</a>. Wine fermented and naturally settled for about 12 months. This wine fits well with fish dishes, soft cheeses and fruit. Recommend to use chilled +14˚C. Contains sulphites.</p>

<p>Cloudberries are found in northern countries, including Latvia. The way to this national treasure is not so simple, but the benefits are invaluable.</p>
<p>Early, cool morning, when the sky begins to colour like the berries we are looking for. The first rays of the sun warm up your shoulders, and the first songs of birds accompany the berry pickers on their way to the swamp. Everyone already knows their best places and each summer after Midsummer celebration they go to check them. Very soon cloudberries must be ready. This is a short time – only about 2 weeks. In the beginning of July, the berries are usually ripe, but others right next to ready ones are just blooming.<br />
Every year, diligent berry pickers manage to find this special Latvian golden berry among mosses and llamas of the bog and deliver them to the hands of skilled wine maker in order to make an excellent cloudberry wine.</p>

<p>Rhubarb wakes up very early in the end of February, start of March, while there is still frost outside. As the sun melts the snow, red tubers begin to come out of the ground, which gradually open leaf after leaf towards the sky. In May and June, rhubarb stems have grown large and thick. Stems more than a meter long and leaves about half a meter long. The crop is harvested before Midsummer before the rhubarb begins to bloom.</p>

<p>Rowanberries in Latvia grow both in gardens and in wild. Although the garden berries surprise with their intense color and their different variations, the berries of wild mountain ash are much bitterer in taste. That&#8217;s why we use wild berries from vicinity of Gauja National Park. Usually the first ones begin to turn red in the end of August, but ripen in mid-September. This is the right time to make rowan wine.</p>
<p>In Latvia, there is a tradition to call at a wedding: &#8220;Bitter, bitter, bitter&#8221;. Wedding guests say this when the food or drink is supposed to be bitter and needs to be sweetened with the new couple&#8217;s kiss. In this case, there is no need to pretend. You can play a joke with your wedding guests by giving them a real bitter drink.</p>

<p>Chokeberry is a common berry in Latvia. They are grown in backyard gardens, as hedges along private houses, and in large fields. It is hard to eat fresh berries a lot because of their astringent taste, however, they are very popular for processing. The most popular non-alcoholic processing is the preparation of syrup, but we are more interested in reflecting Latvian berries in a wine bouquet. The chokeberry fields of Līgatne have been known since the days of collective farms, where the winemaker himself worked in the autumn during the school years.</p>
<p>Chokeberries are harvested in the <a href="https://en.wikipedia.org/wiki/Gauja_National_Park" target="_blank" rel="noopener">Gauja National Park</a>. Chokeberry wine is made from 100% chokeberry juice, fermented and naturally settled for about 12 months. Great addition to pork or beef dishes, as well as hard cheese.
