Semi sweet blackberry wine

August, September is the right time to harvest the “black raspberries” in the garden. When the berry is swollen, it has reached its real ripeness.
Blackberries are found both in wild and in gardens. Wild berries are dark blue with a few large balls forming a berry. They are much more acidic than garden blackberries. We use cultivated berries for wine. They are sweeter, larger in size and have many small balls forming a berry.

Garden blackberries are distinctly black on the outside, but their pink center is surrounded by a white circle. Interestingly, the wine from these berries comes out orange instead of black or dark red.

Berries are harvested in the Gauja National Park. Blackberry wine fermented and naturally settled for about 12 months. It is excellent with desserts, fruit and cheese. Recommend to use chilled +14˚C. Contains sulphites.

There are available also other semi-sweet wines, for example, cloudberry, quince and rhubarb.
