<p>In Latvia, hawthorns are rare in the wild, they can be found mainly in parks and gardens as ornamental plants or near private houses, where they are popular for hedges. White flowers bloom in late May or early June. The pink, round or elongated fruits ripen in late August or September. They are floury, sweet with small stones.</p>
<p>Hawthorns are harvested in the <a href="https://en.wikipedia.org/wiki/Gauja_National_Park" target="_blank" rel="noopener">Gauja National Park</a>. Wine fermented and naturally settled for about 12 months. It goes well with fish dishes and cheese. Recommend to use chilled +14˚C. Contains sulphites. This unusual wine is popular with artists and gourmets.<br />
Every year, Līgatne Winery participates in the Latvian berry and fruit wine competition, as well as the Baltic Cup, where hawthorn wine has been awarded several times for its quality.</p>

<p>Raspberries and blackcurrants get ripe at the same time in middle of July. Raspberries have pleasant sweetness, but blackcurrants – intense, strong, sweet and sour taste. This is a very good blend of two berries in a light red wine.</p>
<p>Berries are harvested in the <a href="https://en.wikipedia.org/wiki/Gauja_National_Park" target="_blank" rel="noopener">Gauja National Park</a>. Wine fermented and naturally settled for about 12 months. Raspberry – blackcurrant dry wine will perfectly fit with wild meat and cheese. Recommend to use chilled +14˚C. Contains sulphites.</p>

<p>Latvia is an apple land, where almost every house has several apple trees. In May and June, the aroma of apple blossoms takes over the gardens and entices bees to pollinate the flowers in order to first fruits could form. The diversity of varieties allows us to enjoy these delicious fruits in the garden from August to December. If fruits are harvested from the tree in fall and stored in a cool cellar, they can be eaten until spring.</p>
<p>Apples are harvested in the <a href="https://en.wikipedia.org/wiki/Gauja_National_Park" target="_blank" rel="noopener">National Park of Gauja</a> in late autumn. During winter apples are held outside in frost in order to increase natural sugar level in fruits. When frost has gone, the juice is squeezed from the apples and the wine is fermented and aged for about 12 months. In wine making process is not added any sugar. We use only natural sugar from apples. There is also not added any water. Wine is made from 100% apple juice. In one bottle of apple ice wine is about one bag of apples. Enjoy dry apple ice wine with fish dishes or fruits. Recommend to use chilled +14˚C. Contains sulphites.</p>

<p>Rhubarb wakes up very early in the end of February, start of March, while there is still frost outside. As the sun melts the snow, red tubers begin to come out of the ground, which gradually open leaf after leaf towards the sky. In May and June, rhubarb stems have grown large and thick. Stems more than a meter long and leaves about half a meter long. The crop is harvested before Midsummer before the rhubarb begins to bloom.</p>

<p>Redcurrants bloom in May, June, and very soon, in July, we can pick ripe berries. These shrubs can be found in almost every backyard garden in Latvia in different glorious colours. We use dark red currants for wine, which gives it a special character.<br />
